Please don’t make the same mistake my wife made. T hinking she bought bacon, and actually bought side pork. The store had it in the bacon area, should have been in the fresh meat area with pork chops and such.
It looks like bacon in the package but is not cured. I’m sure there are some recipes for side pork but I can’t think of any that would not be better with bacon.

Ugh, that brings back unpleasant memories. My mom’s second husband loved to cook side pork. It stinks so bad when it’s cooking, like someone wrapped old spoiled bacon in hair and set it on fire.

It is bacon, but ‘lean bacon’, best for lardons, soups, etc... as a cooking bacon than a bacon bacon.

From what I read it is the same cut but not cured like bacon, so it doesn’t have that “smokey” taste and has a lot more moisture in it. You can turn side pork into bacon with some effort tho. When it was cooking it smelled like a pork chop, not bacon.

Yeah, best for cooking.
Unsliced, belly pork is fantastic, skin heavily salted (large salt crust is removed later and disposed of) and then slow roasted.
Sliced thick, seasoned with salt and pepper then oven cooked for 20 minutes, it can be rather tasty. Try basting with a little honey for a sweeter flavour.

FYI, “Uncured bacon” is still cured, they just don’t use synthetic sodium nitrites. Shouldn’t taste any different as it still has those wonderfully smokey, cancery nitrites, they’re just made by bacteria. The labelling is a way to trick people without microbiology degrees who shop at Whole Foods into thinking its healthier.
However, side pork is completely different.

Not in the US. Bacon is always cured, even when labelled as “uncured” because of reasons. The uncured stuff is cured “naturally” by bacteria whereas the cured bacon is cured by adding synthetic sodium nitrite. Both can cause cancer .

Fry it gently in a cast iron skillet with some steak seasoning. Outta be YUMMY.
